Dark, rich and rounded, with aromatic notes of bramble, cassis and violets, accompianied by undertones of smoke and toasted oak. Silky tannins and fresh acidity provide balance for the fruit intensity - This wine pairs beautifully with duck or smoked cured meats. Viña Tabalí produces elegant, terroir-focussed wines on an impressively grand scale. Their vineyards spread from the pacific coast, to 1600m above sea level on the steep slopes of the Andes Mountains, all in the pursuit of unique soils and microclimates in which to grow grapes of exceptional quality. The fruit is vinified at their winery in Limari, on the edge of the Atacama desert. This Cabernet Sauvignon was grown in the DOM vineyard, situated in the metropolitan region of the Maipo Valley, on a cool south facing slope, prone to relatively strong winds. The vines are planted in low-fertility stony colluvial soils. These factors combine to produce slow-ripening, concentrated fruit and in turn, elegant and high quality wines. After reaching optimal phenolic ripeness, the fruit is harvested by hand then carefully selected, first as whole bunches then again once destemmed. The must was fermented in stainless steel tanks, with maceration post-fermentation. The wine was aged for 10 months in French oak barrels prior to bottling.
