In 2008, extensive spring frosts significantly reduced the size of Napa Valley's grape crop, greatly concentrating color, flavor and acidity in our Cabernet Sauvignon grapes. After blending (Cabernet Sauvignon [81%], Merlot [7%], Cab Franc [7%], Petit Verdot [4%] and Malbec [1%]) to optimize balance, depth and tannin structure, we aged the wine 20 months in French oak barrels, 42% new. The result is a classic Napa Valley Cabernet Sauvignon boasting fragrant blackberry, wild black cherry and loamy earth aromas; richly concentrated blackberry, plum and black cherry flavors; and a long, intense finish with sumptuous chocolate and berry tones. www.cakebred.com.
